2007 Estate Cabernet Sauvignon, Hawley Vineyard

Our 2007 Cabernet Sauvignon is made entirely from the Hawley estate vineyard, which we farm organically on our steep, terraced hillside. Cabernet likes to grow where it has a view. The weak rocky soil found on steep hillsides helps to rein back the natural vigor of the Cabernet vine. We force the vine to develop a large root system to mine for nutrients, minerals and water. Our vines do not produce a lot of fruit, but the clusters that they grow are much more concentrated and intensely flavored than had we grown them in deep, rich soil. The combination of concentrated ripe fruit, artful winemaking, two and a half years aging in the finest French oak barrels, and a bit of good luck have created a very special wine. Notice the lovely deep ruby color. Breathe in the aroma; it’s truly intoxicating with layers of cherry, berry, vanilla and dried flowers. Sip the wine. Let it flow across your tongue and notice how smooth and velvety it is and how these delicious flavors stay with you long after the wine has been swallowed. Lastly, feel the nostalgia from drinking one of only 1,600 bottles produced. This wine was only released to wine club members.
