2013 Late Harvest Zinfandel, Dry Creek Valley
This Late Harvest Zinfandel is rich and sweet at about 10% residual sugar. Selective hand picking helps achieve a balanced acidity to offset the sweetness. Ripe raspberry and blackberry jam with hints of raisins and chocolate. The grapes were picked at 32 degrees brix which is too much sugar for most yeast to ferment to dryness, so the wine is left with whatever sugar remains. We hand picked the grapes so that we could select clusters that were not too raisined and had some acidity to balance out the sweetness. We fermented this small lot in one-ton open top fermenters and punched down the skins every few hours. The wine was drained when it fermented to about 10% sugar and the skins were pressed off in our old manual basket press. The wine was aged for four months in French and American oak barrels.
